Catherine Munster

Catie completed her M.S. in Clinical Nutrition at the New York Institute of Technology and her B.S. in Nutrition and Dietetics at West Chester University. In 2015, she began working as a nutritionist for a start-up wellness company. As the company’s first hire, she was given the opportunity to play a vital role in the company’s development. Initially tasked with creating tailored meal plans and providing nutrition counseling, Catie’s responsibilities quickly grew to include employee hiring and training, team management, program development, project management, customer service, and liaising between departments. In 2019, Catie was promoted from Lead Nutritionist to Director of Nutrition Services.
Catie’s passion for promoting healthier relationships with food and combating nutrition misinformation led her to embark on a new journey in 2021 as a freelance nutritionist. With her entrepreneurial spirit, Catie single-handedly crafted her business plan, developed nutrition programs, built a website, handled marketing, wrote blogs, and created social media content. Her self-reliance and determination have been instrumental in maintaining a steady flow of clients, a testament to her initiative and dedication to her cause.
Catie’s ultimate goal is to have an intellectually stimulating career in dietetics through which she can actively contribute to a healthier society. Outside of Catie’s academic and professional pursuits, she enjoys nature, hiking, reading, geocaching, crocheting, and live music. She is an animal lover and owns a cat named Layla. Catie loves to travel and has spent two years living in Guatemala and one year in Mexico, where she learned Spanish.

Victoria is a second-year combined M.S./DI student in Community Nutrition. She pursued her undergraduate studies here at Cornell and graduated in 2023 with a Bachelor of Science in Nutritional Sciences and a minor in Human Development. She has been a part of Dr. Roger Figueroa's research group since her junior year, working on projects that seek to understand barriers and facilitators of nutritional security for low-income and minorized communities during her undergrad. Her current research aims to investigate how social and neighborhood conditions interdependently affect diet outcomes of parents and their adolescents, as well as how parents and adolescents influence each other.
Having taken courses in both nutrition and psychology, Victoria believes that behaviors related to health are best considered and addressed from a holistic perspective that includes the individual and their environment. She hopes to become a dietitian who is able to maintain this perspective and facilitate sustainable behavioral changes for her patients. She has enjoyed creating nutrition blog posts and recipe cards for Cornell Cooperative Extension while in undergrad and looks forward to experiencing more sectors of community nutrition. Her placement for the fall is with Cornell Sports Nutrition. Beyond academics and professional training, Victoria practices and performs taiko (Japanese drumming) with Yamatai, the student taiko club at Cornell. She finds hitting big drums with her fellow members a sensational experience and also a unique form of exercise!
Jenna Strickland

Jenna (she/her) received her B.S. in Biology with a minor in Human Development from SUNY Geneseo in 2021. Shortly after, she attended Syracuse University, where she completed her M.A. in Nutrition Science in 2024. During her graduate studies, she conducted research exploring dietary intake and biochemical markers such as inflammatory cytokines and vitamin levels among physically active female college students.
Aside from Jenna’s passion for research, Jenna has interests in both sports and clinical nutrition. While at Syracuse University, she interned with the football team. Her responsibilities included traveling with the team to support game day fueling. Furthermore, she assisted with body composition and hydration testing to individualize and meet athletes’ nutritional needs. Aside from these interests in nutrition, Jenna enjoys running, hiking, and spending time outdoors.
Danielle White
Providence, RI

Danielle has a Master's Degree in Sports Nutrition from Concordia University Chicago and a Bachelor's of Science in Health Science from Keene State College, a DPD accredited program in dietetics. Most recently she ran WIC sites at various agencies in Rhode Island, worked as a diet tech at local hospitals, and assessed nutritional needs at a senior congregate meal program through East Bay Community Action Program. She also has experience working in the bike and run industry for GU Energy Labs as their sales and technical representative covering New England. She has also beta tested recipes for a number of published cookbooks. Danielle is passionate about giving back and has volunteered at SNAP-ED, Farm Fresh RI, Girl Scouts, and Clean Ocean Access over the years. Her passions are cycling, especially mountain biking, reading about food history, indigenous food habits, and cooking. Danielle's career aspirations lie within the realm of research. She is particularly interested in nutritional metabolomics and biochemistry.
Katelyn Young
Epsom, NH

Katelyn has both a Master’s Degree in Nutrition and a Bachelor of Science in Nutrition: Dietetics from the University of New Hampshire, where she pursued her interests in Nutrition through volunteer opportunities at local food pantries and the on-campus repurposing kitchen. She also gained lab experience working on projects related to assessing Farmto-Early-Care-and-Education programs in New Hampshire and collecting nutrition and health data from students in an introductory nutrition course. Off-campus, Katelyn also worked as a Nutrition Assistant, helping patients with meal selections and serving as a line of communication between the hospital kitchen and the dietitians and other hospital staff.
Katelyn’s career goals include becoming a clinical dietitian and research dietitian, specializing in maternal and child nutrition. Outside of dietetics, she Katelyn enjoys reading, cooking, playing soccer, and spending time with her partner and cat.
Chenyu "Charlotte" Zhang

Chenyu obtained her master's degree in Nutritional Science at Cornell University . She obtained her bachelor's degree at the University of Arizona double major in both Biology (Biomedical track) and Nutrition Science (Dietetic track). Her current research focused on community based engaged learning. She likes to listen to music, play with her dogs, hiking, skiing and traveling all over the world.
