Professor Caudill is internationally recognized for her work on folate and choline, and the intake levels required to meet metabolic requirements and improve physiologic outcomes particularly during pregnancy. Randomized clinical trials with controlled feeding were employed together with targeted and non-targeted assessments of genomic, epigenetic, metabolic, and nutritional endpoints. Professor Caudill has published over 170 original research papers, reviews, and book chapters, and has delivered numerous scientific presentations on the importance of choline nutrition during pregnancy.
