Nok In Chan (Felicia)
Felicia Chan is an M.S. student in the Nutrition + Dietetics track. She earned dual degrees in Nutrition and Dietetics and in Nutrition, Fitness, and Health, with a minor in Music, from Purdue University in 2025. During her undergraduate studies, Felicia worked as a Nutrition Coach, providing clients with guidance on goal setting and sustainable lifestyle changes. Ruihan Xu
Ruihan is a Ph.D. candidate in Dr. Kimberly O’Brien’s lab. She obtained her BA in Food System Nutrition and Health at the University of Washington-Seattle. Her MPH degree in Nutrition and Dietetics was completed at the University of North Carolina-Chapel Hill. She was also trained in the MRT-TI international lactation consultant training program during her second year of MPH. After completing the Dietetic Internship and lactation clinical practice hours, she has obtained both the RDN
Rujia Xie
Rujia Xie (she/her) is a second-year PhD student in Nutrition with minors in Demography and City and Regional Planning. Working in Dr. Laura Bellows’s lab, Rujia’s research interest lies at the intersection of health behaviors, built environments, safety net programs, and social equity. Rujia earned her BA from Duke University, double majoring in Public Policy and Global Health with a minor in Gender and Sexuality Studies. During her PhD, Rujia aims to quantify and visualize
Kristen Carter Elmore
Kristen is the Director for the Program for Research on Youth Development and Engagement in the BCTR, associate director of the BCTR, and the Community-Engaged Learning Coordinator for Cornell Human Ecology. Her work focuses on applied research and teaching that connects researchers, undergraduate students, and community partners, with a particular focus on partnerships that support educators in helping youth from all backgrounds succeed and thrive.
Kelly Quinn
Kelly earned a bachelor’s degree in Dietetics from Marywood University, Scranton, where she also completed their Coordinated Undergraduate Program in Dietetics. She received a master’s degree in Nutrition Science from Northern Illinois University and has enjoyed various roles as a registered dietitian over the past 3 decades working in New York, Massachusetts, and Illinois.
Kelly’s experience spans from an early concentration in clinical dietetics, with a specialty in nutrition support, which shifted to community dietetics
Pardis Rostami
Jingjie Du
Jingjie joined the Ph.D. program in Nutritional Sciences at Cornell University in January 2023. She works in Dr. Xin-Gen Lei’s group, where she studies phytases as both animal feed additives and soil fertilizers using computational biology and enzyme engineering. Her work focuses on uncovering the evolutionary diversity and catalytic mechanisms of phosphorus-mobilizing enzymes and developing soil-compatible biocatalysts to reduce fertilizer dependence and environmental impact. Motivated by the potential of biotechnology to address global challenges in
