Elisabetta Ferrero (she/her) is a PhD student in Nutrition, working with Dr. Roger Figueroa in the FIG Lab. She holds a Master of Public Health in Nutrition from the Harvard T. H. Chan School of Public Health, where she specialized in Global Nutrition. Upon graduating from her masters, she continued working at the Chan School, coordinating numerous studies addressing multiple forms of malnutrition among adolescents in Tanzania, Burkina Faso, and South Africa, particularly through schools. In 2025, she joined Karolinska Institutet in Sweden, as a grant‑writing research assistant, supporting numerous proposals for the Community Nutrition and Physical Activity team and the Global and Sexual Health team.

In the FIG Lab, Elisabetta is currently contributing to research projects on produce prescription programs and local food procurement. She plans on focusing her doctoral research on strategies to reduce food insecurity and strengthen local food procurement systems, with a particular interest in farm‑to‑school models.
